Lithography (Litho) Printing  is the most common form of print for high volume jobs. The print image (computer file) is burnt onto a plate, then transferred (offset) onto a rubber blanket and then onto the selected media (paper, etc.) via ink from the rollers. In four colour process print you would have CMYK (Cyan, Magenta, Yellow and Black) plates, each colour is then transferred onto the media via the ink from the rollers to create the desired finished image. The set-up from start to finish is a longer process than Digital Printing, but, the image quality is far superior.
